Temperature Of Tea
Our
human palate is much more sensitive to moderately warm beverages
than to very hot ones. Therefore it is recommended that you
maintain patience to allow the tea to cool until you can
comfortably touch the cup; if the cup is too hot, the tea is too
hot to drink.

Tea,
of course, can be served in any kind of heat-resistant cup or mug.
Personally I prefer using china tea cups as it does enhance the
beauty of the tea and makes the affair much more elegant.
Now For The Sandwiches And Scones:
Curried Chicken Salad Tea Sandwiches
Ingredients
:
2 cups chopped, cooked, boneless, skinless chicken breast
1/4
cup chopped celery
1/3
cup fat-free mayonnaise
1/3
cup raisins
3
tablespoon chopped scallions
2
teaspoons curry powder
1/8
teaspoon salt
18
slices white, wheat pumpernickel or bread of your choice.
Preparation:
In
a medium bowl, stir together all of the ingredients except for the
bread. Trim the crusts from the slices of bread. Top 9
slices with curried chicken mixture and spread to cover the
surface of the bread. Top each sandwich with the remaining
slices of bread and cut into squares or triangles.
