Although I grew up in Australia my Mum tried very hard to maintain some Lithuanian traditions in the home, Mum was a fabulous cook and made everything from scratch, she realized soon enough that the Australian Climate was not suitable for heavy European meals and reluctantly began making meals more condusive to our appetite and climate.  Below are only but a few of the meals I remember Mum slaving over.



 

MY ALL TIME FAVORITE!

 PLAIN POTATO PANCAKES 

Paprasti bulviniai blynai

1 k (2 lbs) potatoes, peeled
2 eggs, beaten
pinch of salt
vegetable oil or lard for frying

Grate potatoes, add eggs and pinch of salt. Mix well. Fry in hot oil.  These pancakes are eaten for breakfast or lunch with fried bacon or sour cream.

HAM-ONION POTATO PANCAKES
                                                                            Bulviniai blynai su kumpiu ir svogūnais

1 k (2 lbs) potatoes, peeled and grated
100 g (3 oz) smoked ham, finely chopped
1 egg, beaten; 1 onion, grated

Mix grated potatoes and onion. Add egg and ham. Blend well. Place tablespoonfuls in hot fat, brown both sides.
Serve with sour cream, for breakfast or lunch.
